Abstract: In this thesis work "COCONA CUTS DRYING (Solanum sessi/if/forum Dunal) HOT AIR WITH PRETREATMENT OSMOTIC DEHYDRA TION" was searched conservation methodology cocona pieces of which were subjected to serosa solutions of 30%, 40% and 50% as pretreatment and air flow with temperatures of 40ºC, 50ºC and 60ºC (constant speed air 1.1 m/s), where the treatment of 60ºC, with 40% sucrose, has better organoleptic characteristics and greater moisture reduction (HBS) 0.022 kg H20/kg of dry solid, with contents of 2% protein, 5.98 mg of vitamin C, 1.71 % fat, 2.24% ash and 0.81% reducing sugars. The effect of temperature and concentrations of osmotic solution curves were estimated weight loss, drying speed, water activity and color, depending on the drying time (8 hours) curves were fitted with drying equation of Fick's second law and diffusivity obtained was 7.44 x 10·8 m2/s at 60ºC treatment and 40% sucrose. The best treatment was determined by sensory evaluation with 5-point hedonic scale and untrained panelists. Sensory evaluation attributes such as color, odor, flavor, texture were represented by the response surface plots. We evaluated the packaged product stored for 3 months, obtaining 10.08% moisture and water activity 0.492 presenting microbiological stability.
En el presente trabajo de tesis "SECADO DE TROZOS DE COCONA (Solanum sessiliflorum Dunal) POR AIRE CALIENTE CON PRETRA TAMIENTO DE OSMODESHIDRATACIÓN", se buscó una metodología de conservación de trozos de cocona los cuales fueron sometidos a soluciones de sacarosa de 30%, 40% y 50% como pretratamiento y flujos de aire con temperaturas de 40°C, 50°C y 60°C, (velocidad constante de aire de 1.1 m/s),donde el tratamiento de 60°C, con 40% de sacarosa, presenta mejores características organolépticas, y una mayor reducción en la humedad (HBS) de 0.022 kg H20/Kg de sólido seco; con contenidos de 2% en proteínas, 5.98 mg de vitamina C, 1.71% de grasas, 2.24% de cenizas y 0.81% de azúcares reductores. El efecto de la temperatura y las concentraciones de solución osmótica fueron estimadas en las curvas de pérdida de peso, velocidad de secado, actividad de agua y color, en función del tiempo de secado (8 horas); las curvas de secado fueron ajustadas con la ecuación de la segunda ley de Fick y la difusividad obtenida fue de 7.44 x 10-8 m2/s en el tratamiento de 60ºC y 40% de sacarosa. El mejor tratamiento se determinó mediante evaluación sensorial con escala hedónica de 5 puntos y panelistas no entrenados. Los atributos de evaluación sensorial como color, olor, sabor, textura fueron representados mediante las gráficas de superficie de respuesta. Se evaluó el producto empacado almacenado por 3 meses, obteniéndose 10.08% de humedad y 0.492 de actividad de agua presentándose estabilidad microbiológica.
